The method
0 of 5 steps marked
Keep your place for this page visit. Ticks do not confirm doneness or food safety; follow every cooking and storage instruction.
Step 1. Get the fillings ready
Grate the cheddar and snip the washed chives. Split the bagels. Crack the eggs into a bowl, add the milk and pepper, and beat with a fork. Wash hands after handling the shells.
Step 2. Toast the bagels
Toast the bagel halves according to your toaster instructions. Put them on clean plates while you cook the eggs.
Step 3. Scramble gently
Melt the butter in the frying pan over a low-to-medium heat. Pour in the eggs and slowly sweep a spatula across the base, lifting and folding the curds for about 5–7 minutes. Reduce the heat if the eggs stick or brown.
Step 4. Melt in the cheddar
Fold in the cheddar and most of the chives. Continue stirring until the cheese melts and the eggs are fully set, with no liquid egg remaining. This version is served fully cooked, not runny; timing alone is not the check.
Step 5. Build and serve
Divide the eggs between the two bagels, scatter over the remaining chives and add the tops. Serve promptly while the toast is crisp.

Swaps & variations
- Use the same weight of grated vegetarian Red Leicester instead of cheddar.
- Replace the chives with the same weight of washed, finely chopped flat-leaf parsley.
- A plain bread roll can replace each bagel; check its ingredients, size and toasting instructions.

Lemon, blueberry and ricotta pancakes

Ricotta pancakes dotted with blueberries and brightened with lemon zest. Cook small rounds so the middles set before the buttery edges become too dark.
